Coconut Rice

Coconut rice is a dish that’s very easy to make these days. This is a recipe I’ve shared with a number of my friends who wanted an easy but exotic rice recipe from Indian. My colleague and friend, Elizabeth Oloo, likes this recipe and makes better coconut rice than I do!

Many years ago, when I made coconut rice in India, just extracting the coconut milk was a cumbersome task. I had to first get a fresh coconut, grate it, extract the milk, strain it, and then start the process of making coconut rice. I only made it on special occasions – when I had plenty of time to spend in the kitchen. Now-a-days you can get coconut milk in a can. Oh, the joy of modern cooking!

Coconut Rice

2 cups Basmati rice
2 tablespoons ghee or vegetable oil
1 1-inch piece of cinnamon
2 green cardamoms, bruised
¼ cup diced onions
½ teaspoon turmeric
2 teaspoons salt
1 can coconut milk
2 cups of water
2 tablespoons fried cashew nuts

In a heavy bottomed pan add ghee. When it shimmers add the cinnamon, cardamoms, and diced onions. Sauté for a minute and when onions are transparent add the washed and drained basmati rice, turmeric and salt. Fry for two minutes. Add the coconut milk and two cups of water.

Bring the rice to a boil then turn heat to low, cover the dish and let it cook for 15 minutes. Do not open the dish or stir during the 15 minutes. Turn off the heat and keep the rice covered until you are ready to serve. Fluff rice gently with a fork. Garnish with fried cashew nuts and serve.

Palak Paneer (Spinach with Indian Cheese)

Palak paneer is a popular North Indian vegetarian dish. When my friends and I go to an Indian restaurant, one of them always orders palak paneer. This recipe, my dear friend, is for you!

I have made palak paneer several times in many different ways, but this recipe is my favorite. Paneer can be bought at an Indian grocery store. I will share a recipe on how you can make paneer at home sometime soon.

A word of caution, make sure that you adjust the number of green chillies depending on the amount of heat you can tolerate. Also, gently crush the dry fenugreek leaves with your fingers, before adding them. This makes a big difference in bringing out the essence of these leaves. Using ghee, dry fenugreek leaves (which is called kasoori methi in Hindi), yoghurt, nutmeg, and lemon juice elevated this dish and gave it a unique flavor.

Palak Paneer

1 pound spinach leaves
3 tablespoons ghee
1 teaspoon cumin seeds
3 tablespoons finely chopped garlic
1 cup finely chopped onion
Salt to taste
2 tablespoons dry fenugreek leaves, (kasoori methi)
2 teaspoons fined chopped green chillies
1 tablespoon coriander powder
½ teaspoon turmeric powder
1 teaspoon freshly grated nutmeg
1 cup plain yoghurt
12 ounces (340 grams) paneer cut into cubes, and lightly shallow fried
1 tablespoon lemon juice

Wash the fresh spinach leaves, and put them in a large pot with three tablespoons of water. Cover and cook over medium-high heat for five minutes. Drain the spinach in a colander and then place it in a large bowl with ice water. This stops the spinach from cooking and helps retain its color. When completely cool, drain the water, and purée the spinach in a blender.

Melt three tablespoons ghee in a medium sauce-pan over medium-high heat. Add cumin seeds and when they sputter add garlic and cook for 30 seconds. Add onions and salt; cook stirring frequently, until softened. Lower the heat to medium. Gently crush the fenugreek leaves, before adding them to the onion mixture. Add green chillies, coriander powder, turmeric powder and grated nutmeg. Cook, stirring constantly, until fragrant, about one minute. Add the yoghurt, and spinach purée. Stir, and bring to simmer, allowing the flavors to blend, about five minutes. Gently fold in the paneer cubes. Turn off the heat and stir in lemon juice. Your delicious palak paneer is ready to be served!

Eggplant Sambola

Eggplant (brinjal) sambola was a dish I first tasted when I was in college, lived in the girls hostel, and ate at the cafeteria. Needless to say, there was much to be desired in the meals we were served. Many of us brought different types if Indian pickles, sambola and other preserves which we shared with each other during our meals. It helped the food go down! This reminds me of the song, “Just a spoon full of sugar makes the medicine go down.” But, it wasn’t that bad!

Sambola is often made with lemon, chilli, tomato, onion, and fish. My friends from Sri Lanka introduced me to eggplant sambola. Here is my version of this delightfully sweet, sour, and spicy dish.

Eggplant Sambola

5 medium eggplants
2 ½ teaspoons salt
2 teaspoons turmeric
¾ cup oil
1 tablespoon black mustard seeds
1 cup diced onions
6 garlic cloves
1 2-inch piece of ginger, chopped
½ cup vinegar
2 ½ teaspoons coriander powder
2 teaspoons chilli powder
3 teaspoons cumin powder
2 1-inch pieces of cinnamon
4 green chillies, sliced
½ cup tamarind
1 cup hot water
2 teaspoons sugar

Cut eggplants into thin slices and rub salt and turmeric on them. Set aside for 30 minutes. Drain liquid and dry eggplant slices with paper towel.

Heat oil and fry eggplant slices over medium heat till brown. It takes about one minute per side.

In a blender add mustard seeds, onion, garlic, ginger, and vinegar, and blend to a smooth puree. Soak tamarind in hot water for about 15 minutes. Strain and keep the extract.

Heat about three tablespoons of the same oil used for frying eggplant slices. Add mustard, onion, garlic, ginger, and vinegar puree and fry until it turns light brown. Add coriander, chilli,and cumin powder. Fry for a minute. Then add cinnamon, green chillies, tamarind liquid, and sugar. Finally add the fried eggplant and simmer for eight minutes.

Bangalore Vadais

Many years ago I worked in Bangalore, India. My best friend and I lived close to each other so we travelled to work together. On our way back home we had to pass by the vadai man on Mosque Road. There is nothing more intoxicating than the smell of deep fried vadais wafting in the air at 6:30 in the evening. We could not resist the temptation. Hot vadais wrapped in a piece of newspaper never tasted better. It had a crispy exterior and a soft center bursting with a fusion of flavors – onion, garlic, ginger, chilli, mint, cilantro and cinnamon. Those were the good old days when these simple pleasures kept two young girls giggling and happy!

Vadais are often served at tea time and as an accompaniment to a meal. They are made with different types of legumes and lentils. I have used split Bengal gram for these vadais. You will find split Bengal gram at an Indian grocery store. Split Bengal gram is a relative of chickpeas and it is used to make dal and savory dishes. It is also roasted and ground to make Bengal gram flour (besan) which is used to make various sweet and savory Indian dishes. Try this recipe and I hope your vadais and chutney turn out beautifully!

Bangalore Vadais

2 cups chana dal (split Bengal gram)
2 teaspoons dry red chilli flakes
1 teaspoon cumin seeds
1 teaspoon cinnamon powder
1 cup finely chopped onion
1 tablespoon finely chopped garlic
1 teaspoon finely chopped ginger
½ cup finely chopped cilantro leaves
1 tablespoon finely chopped green chillies
1 tablespoon finely chopped mint leaves
Salt to taste
Oil for deep frying

Wash and soak chana dal overnight. Drain well and remove two tablespoons of dal and set aside. In a blender grind coarsely the dal, chilli flakes, cumin seeds, and cinnamon powder without water. Do this in two batches and it should not be ground to a paste. Remove into a large bowl and add the rest of the ingredients except the oil. Add the two tablespoons of dal that was set aside and mix well.

Heat oil in a wok and keep it on medium-high heat throughout the frying process.

Make balls, using about three tablespoons of the vadai mixture, and flatten each one to about two inches in diameter on the palm of your hand. It helps to wet your palm and finger tips slightly before you form each vadai. Slide each vadai gently into the hot oil. Make four to five vadais at a time. Fry until golden brown on bottom, about three minutes. Turn and continue frying until golden brown on second side, another three minutes. Drain on paper towels. Repeat with the remaining vadai mixture. Serve with cilantro and mint chutney.

For the Cilantro and Mint Chutney

2 cups roughly chopped cilantro leaves
1 cup fresh mint leaves
3-4 green chillies, chopped
½ teaspoon sugar
3 tablespoons fresh lemon juice
1 tablespoon water
Salt to taste

Put all the ingredients in a blender, and purée. Serve with vadais.

Fresh Coconut-Carrot Cake

My ancestors are natives of Kerala, a state in India often called, “God’s own country”. Kerala is located on the Malabar Coast of south-west India. Many words come to mind when I think about Kerala – beaches, forests, waterfalls, backwaters, houseboats, paddy fields, fish, coconuts, pineapples, cashew nuts, jackfruit, mangoes, bananas, festivals, grandparents, and Amma and Papa. Tucked away in my heart are numerous delightful memories of family vacations in Kerala. My parents grew up in Kerala and later moved further north to Pune, where I was born.

Today, I am sharing with you a recipe for fresh coconut-carrot cake, as an ode to Kerala. The carrots help to keep the cake moist. Other ingredients include pineapple, walnuts, cinnamon, and cream cheese. I have not tasted a better coconut-carrot cake, if I do say so myself. The combination of flavors and textures is absolutely scrumptious!

For the Fresh Coconut-carrot Cake

2 cups all-purpose flour
2 teaspoons cinnamon powder
2 teaspoons baking soda
½ teaspoon salt
4 eggs
¾ cup vegetable oil
¾ cup buttermilk
1 ¾ cups sugar
2 teaspoons vanilla
2 ½ cups freshly grated coconut
1 cup finely chopped canned pineapple, drained
1 cup walnuts, coarsely chopped
2 cups grated carrot

Grease and flour a 13”x 9” baking pan. Preheat oven to 350 degrees F. Sift flour, cinnamon, baking soda, and salt.

In the large bowl of an electric mixer, fitted with the paddle attachment, beat eggs. Add oil, buttermilk, sugar, and vanilla. Beat until well mixed. Add flour mixture, coconut, pineapple, walnuts and carrot. Mix on low speed for one minute. Pour into prepared pan and bake for 55-60 minutes until cake tester comes out clean. Cool for 15 minutes and then invert the cake onto a wire rack to cool completely.

For the Cream Cheese Frosting

¼ lb butter (1 stick), room temperature
1 (8 oz) pkg. cream cheese, room temperature
2 cups confectioners’ sugar
1 teaspoon vanilla
¼ cup walnuts, coarsely chopped

In a large bowl of an electric mixer add butter, cream cheese, and beat until fluffy. Add confectioners’ sugar, one cup at a time, and mix on low speed until smooth. Stir in vanilla. Frost cake and decorate with walnuts. Refrigerate until the frosting sets.

Lomo Saltado

As a farewell gift to me, my colleagues at the World Bank compiled a cookbook of recipes from each of their home countries. This is my first blog post and to honor them I am featuring one of my favorite dishes from Peru, Lomo Saltado. Thank you, Ruth Delgado Flynn, for sharing your recipe with me. I have made some changes to the recipe because I could not find Aji Amarillo (Peruvian yellow hot pepper). So, I replaced it with Aji Amarillo paste and Panca Pepper paste.

The dish tasted authentic, with just the right amount of heat from the aji pepper paste and I was thrilled that I could make it at home! I made the French fries from scratch but you can use store bought frozen fries. If you like Lomo Saltado, give this recipe a try. You will not be disappointed.

Lomo Saltado (adapted from Ruth Delgado’s recipe)
1 ½ lbs beef sirloin or tenderloin
1 tablespoon grated garlic cloves
1 teaspoon grated ginger
2 tablespoons Aji amarillo paste
2 tablespoons Panca pepper paste
1 tablespoon soy sauce
1 tablespoon red wine vinegar
1 teaspoon cumin powder
1 teaspoon pepper powder
1 large red onion, cut into strips and separated
3 plum tomatoes, de-seeded and quartered
2 tablespoons chopped cilantro
3 tablespoons canola or peanut oil
2 large Russet potatoes
Oil for deep frying
Salt to taste

For the French fries (adapted from Cook’s Illustrated Cookbook)

Peel potatoes and cut them lengthwise into ¼ inch thick fries (French fries). Rinse fries several times until the starchy water turns clear. Cover them with cold water and with three cups of ice cubes. Leave them in the water and ice for about 30 minutes.

Heat oil for deep frying in a large wok until the temperature reaches 325 degrees.

Pour ice and water off and wrap fries in a clean towel and pat completely dry. Add a handful of fries at a time to the hot oil and cook until the fries turn light golden in color. About 8 minutes. Remove fries with a slotted spoon and place on paper towels. Drain for ten minutes. Cook remaining fries.

When you are ready to serve the Lomo Saltado, reheat the oil to 350 degrees and fry the French fries again until light brown and crisp. Remove fries and drain on paper towels.  Sprinkle a teaspoon of salt over them. Gently add them to the prepared Lomo Saltado just before you serve.

For the Lomo Saltado

Cut beef into ½ inch thick strips. In a bowl add garlic, ginger, aji paste, panca paste, soy sauce, red wine vinegar, cumin powder, pepper powder and beef. Stir so beef is well coated and marinate for 20 minutes. Heat 1 tablespoon of oil in a pan until very hot. Place half the pieces of beef and let it get brown on one side before you turn it over (about three minutes). Do not add liquid from marinade. Stir fry until all the beef turns brown. Remove and add another tablespoon of oil and repeat the above process with the rest of the beef. Remove from the pan. Add the last tablespoon of oil and add red onions and stir fry for two minutes. Add tomatoes, a pinch of salt and the beef and stir fry for another two minutes. At this point if you want a little sauce sprinkle two tablespoons of water and stir fry for a minute. Add French fries and cilantro. Serve with white rice.
